Since opening in 1967, Hakata Yari Udon Bettei has gained fame and recognition in Fukuoka and other prefectures, as a Hakata-style udon restaurant.
The restaurant's dashi soup stocks are all made from Kyushu-sourced ingredients, richly flavored with ago dashi (from flying fish), mackerel flakes, dried sardines, katsuobushi and niboshi. Noodles are made using flour from Fukuoka's region, with a slippery and chewy texture.
